We are starting our 24 day challenge tomorrow morning, so I prepped our lunches for the work week. If you’re anything like me, you need to make quick and easy food choices. And, if you’re like me, those choices aren’t always the best. The best thing about this wrap is that you can fill it with just about anything! Think, southwestern, Asian, salads and so much more. This is what I did for ours this week. The cost is about $10 for 8 if them. I had some frozen shredded chicken in the freezer that I used, but you could fill it with canned (yuck), or use lunch meat even. Whatever works!
1) get your ingredients ready. I used my mandolin slicer to julienne the carrots and cucumber. I also let the cream cheese come to room temp to make it easier to spread. My ingredients are shredded chicken, cucumber, carrots, chive cream cheese, low carb flour tortillas, and arugula/spinach mix.
2) work in an assembly line to make your life easier. Spread a tablespoon or so of the cream cheese mix, going all the way to the edges that’ll touch when you roll them. Makes them stick together)
2) top with spinach mix. Then carrots. Then celery. Then chicken.
4) wrap in tin foil
